My second favorite after zucchini boats. Something about squash is so satisfying I wish it were around a lot longer. But toward the end of gardening, after you've eaten zucchini bread, batter dipped sticks and sauteed they are great in soup. Simple simple side dish a little cheese and the little ones are sure to at least try these green treasures.

This is a delicious way to create a zucchini side dish with all the extra zucchini and tomatoes from the garden. The flavor from the garlic and basil infuse into the zucchini and tomato slices. We love the bit of salty Parmesan cheese sprinkled on top. This is easy to prepare and so good! Test Kitchen Avatar The Test Kitchen
