My second favorite after zucchini boats. Something about squash is so satisfying I wish it were around a lot longer. But toward the end of gardening, after you've eaten zucchini bread, batter dipped sticks and sauteed they are great in soup. Simple simple side dish a little cheese and the little ones are sure to at least try these green treasures.

This is a delicious way to create a zucchini side dish with all the extra zucchini and tomatoes from the garden. The flavor from the garlic and basil infuse into the zucchini and tomato slices. We love the bit of salty Parmesan cheese sprinkled on top. This is easy to prepare and so good!

    zucchini squash, sliced
  • 2
    tomatoes, diced or sliced
  • 4 clove
    garlic, smashed
  • olive oil
  • pinch
    basil
  • salt and pepper, to taste
  • Parmesan cheese, sprinkle on top

How To Make zucchini and tomatoes foil packets

  • Zucchini, tomatoes, and garlic on a sheet of aluminum foil.

    Toss 2 sliced zucchini, 2 diced tomatoes, 4 smashed and garlic cloves. Drizzle with olive oil, a pinch of basil, and salt and pepper on a sheet of foil. Form a packet.
  • Foil turned into a pocket and placed on the grill.

    Grill over high heat, 10 minutes.
  • A bite of zucchini and tomato foil packets.

    Top with grated Parmesan.
