Yellow Squash Casserole

6 csliced yellow squash cooked and drained
2 largeegg yolks or use egg beaters
1 csour cream (fat-free is okay)
2 Tbspwhite flour
2 largeegg whtes stiffy beaten or use egg white substitute
6 slicebacon cooked crispy and drained
1 1/2 cgrated cheese (colby or cheddar)
1/4 cbread crumbs ( i use italian bread crumbs)
How to Make Yellow Squash Casserole
- Cook and drain sliced squash and set aside. Cook bacon in microwave until crisp and place on paper towel to drain. Mix egg yolks, sour cream, flour.
- In a separate bowl beat egg whites until stiff peaks form.
- In a greased casserole dish combine squash with yolks/sour cream/flour mixture. Crumble bacon and add to squash mixture. Fold in egg whites gently.
- Melt butter in microwave and drizzle over squash mixture. Top with bread crumbs. Bake 20 minutes at 350 degrees. Enjoy.
