A very delightful vegetable casserole dish that is a grand accompanyment to any BBQ ribs/chicken/brisket meal. It takes a little time to prepare but is worth the effort. Stores and reheats well.
egg whtes stiffy beaten or use egg white substitute
6 slice
bacon cooked crispy and drained
1 1/2 c
grated cheese (colby or cheddar)
1 Tbsp
butter
1/4 c
bread crumbs ( i use italian bread crumbs)
How To Make yellow squash casserole

Cook and drain sliced squash and set aside. Cook bacon in microwave until crisp and place on paper towel to drain. Mix egg yolks, sour cream, flour.

In a separate bowl beat egg whites until stiff peaks form.

In a greased casserole dish combine squash with yolks/sour cream/flour mixture. Crumble bacon and add to squash mixture. Fold in egg whites gently.

Melt butter in microwave and drizzle over squash mixture. Top with bread crumbs. Bake 20 minutes at 350 degrees. Enjoy.
