A very delightful vegetable casserole dish that is a grand accompanyment to any BBQ ribs/chicken/brisket meal. It takes a little time to prepare but is worth the effort. Stores and reheats well.

Ingredients
- 6 cups sliced yellow squash cooked and drained
- 2 large egg yolks or use egg beaters
- 1 cup sour cream (fat-free is okay)
- 2 tablespoons white flour
- 2 large egg whtes stiffy beaten or use egg white substitute
- 6 slices bacon cooked crispy and drained
- 1 1/2 cups grated cheese (colby or cheddar)
- 1 tablespoon butter
- 1/4 cup bread crumbs ( i use italian bread crumbs)
How To Make yellow squash casserole

Step 1Cook and drain sliced squash and set aside. Cook bacon in microwave until crisp and place on paper towel to drain. Mix egg yolks, sour cream, flour.

Step 2In a separate bowl beat egg whites until stiff peaks form.

Step 3In a greased casserole dish combine squash with yolks/sour cream/flour mixture. Crumble bacon and add to squash mixture. Fold in egg whites gently.

Step 4Melt butter in microwave and drizzle over squash mixture. Top with bread crumbs. Bake 20 minutes at 350 degrees. Enjoy.
