A very delightful vegetable casserole dish that is a grand accompanyment to any BBQ ribs/chicken/brisket meal. It takes a little time to prepare but is worth the effort. Stores and reheats well.

6 c
sliced yellow squash cooked and drained
2 large
egg yolks or use egg beaters
1 c
sour cream (fat-free is okay)
2 Tbsp
white flour
2 large
egg whtes stiffy beaten or use egg white substitute
6 slice
bacon cooked crispy and drained
1 1/2 c
grated cheese (colby or cheddar)
1 Tbsp
1/4 c
bread crumbs ( i use italian bread crumbs)

How to Make Yellow Squash Casserole


  • 1Cook and drain sliced squash and set aside. Cook bacon in microwave until crisp and place on paper towel to drain. Mix egg yolks, sour cream, flour.
  • 2In a separate bowl beat egg whites until stiff peaks form.
  • 3In a greased casserole dish combine squash with yolks/sour cream/flour mixture. Crumble bacon and add to squash mixture. Fold in egg whites gently.
  • 4Melt butter in microwave and drizzle over squash mixture. Top with bread crumbs. Bake 20 minutes at 350 degrees. Enjoy.
