Ingredients

  • 3 Tbsp
    butter
  • 4
    yellow squashes, sliced
  • 1 medium
    onion, chopped
  • 4 oz
    green chiles, diced
  • ·
    sea salt to taste
  • pinch
    pepper
  • ·
    cheddar cheese, shredded

How to Make Yellow Squash Casserole

Step-by-Step

  1. In a skillet, melt margarine over medium heat; saute squash and onion until crisp-tender.
  2. Remove from the heat; stir in chiles, crackers, and salt and pepper.
  3. Spoon into a greased 1 1/2 quart casserole.
  4. Top with cheese.
  5. Bake at 350 degrees for 15-20 minutes.
