    cut up yellow squash (in medallions)
  • 1 c
    torn up old potato bread
  • 2
  • 1/2 c
    brown sugar, firmly packed
  • 1/2 tsp
  • 3/4 c

How to Make Yellow Squash Casserole


  1. Preheat oven to 350.
  2. Clean, slice and arrange yellow squash in a sprayed (PAM) or greased 9 X 12 glass pan
  3. Mix potato bread with brown sugar and sprinkle over entire dish
  4. Whip eggs and milk together and pour over squash and bread/sugar mix
  5. Cook in 350 oven for 1 hour or until top is browned slightly and eggs are cooked (no sloshing around - it should be firm)
  6. serve when done, freezer store extras in zip lock baggy for freezer. Reheat as needed in microwave.
