Mark's Polish family recipe. I remember having dandelion greens on a salad when we were in France. I was surprised how good they were!

Ingredients
- 1 1/2 pounds raw young dandelion,swiss chard, or endive greens
- 2 tablespoons butter
- 1 cup diced salt pork or bacon
- 1 small onion, coarsely chopped
- 1/4 cup vinegar
How To Make wilted greens, mark's

Step 1Wash greens well in cold water. Shake to remove most water. Put in serving dish. Melt butter in skillet and brown salt pork or bacon, and onion. Remove from heat and add vinegar. Mix well and toss with greens while mixture is still hot. Serve immediately.
