Depending on the size of the head of cauliflower, there could be a lot of cheese left over. I had a lot of cheese left, so I used it over some pasta.

Ingredients
- 1 large head of cauliflower
- 1 tablespoon salt
- 2 tablespoons olive oil
- CHEESE SAUCE
- 4 tablespoons butter
- 1/3 cup all-purpose flour
- 2 cups milk
- 1 1/2 cups shredded sharp cheddar cheese
- 1 1/2 cups shredded Gruyere cheese
- salt and pepper
How To Make whole roasted cheese cauliflower

Step 1Heat a large pan of water enough to hold the cauliflower head and add the salt. Trim the cauliflower of the green leaves and keep the stem intact. Bring the water to a boil and add the cauliflower head to the water upside down. Cook the cauliflower for about 10 minutes. Remove from the water and place in a baking dish, top side up.

Step 2Preheat oven to 350 degrees. Drizzle the cauliflower with olive oil and season with salt and pepper. Place in the oven and roast for about 35 minutes until browned but not falling apart.

Step 3Meanwhile, make the cheese sauce. Add the butter to a large saucepan. Whisk in the flour and make a roux. Cook 2 minutes. Slowly add the milk, whisking constantly. Then add the cheeses and cook until the cheese is melted. Taste and adjust salt and pepper.

Step 4Remove the cauliflower from the oven and let it sit for about 10 minutes. Then pour the cheese over the top. Heat the broiler and add the cauliflower back to the oven about 6 inches from the heat. Cook until the cheese is browned and bubbly.
