Ingredients

  • 1 head cauliflower
  • 2 pints cherry tomatoes
  • 4 cloves garlic, minced
  • salt, to taste
  • pepper, to taste
  • paprika, to taste
  • 4 tablespoons olive oil divided

How To Make whole roasted cauliflower with burst tomatoes

  • Step 1
    Preheat oven to 400 degrees F. Trim the head of cauliflower and discard the green leaves.
  • Step 2
    Place the cauliflower in the middle of a Dutch oven. Drizzle 2 Tbsp olive oil over the top. Season with salt, pepper, and paprika.
  • Step 3
    Mix the tomatoes and garlic with the remaining olive oil.
  • Step 4
    Pour the tomatoes around the cauliflower and cover and place in the oven for 1 hour.
  • Step 5
    Remove the lid about halfway through to brown the top of the cauliflower.
