War Eagle Carrots

This is a great way to get kids to eat their vegetables. Just a little different than my honey glazed carrots.
Ingredients

4 csliced carrots

1 Tbspbutter, melted
-
1/3 capricot preserves

1/4 tspkosher salt
-
1/4 tsporange zest
-
1/2 tspfreshly grated nutmeg
-
2 tspfreshly squeezed lemon juice
How to Make War Eagle Carrots
- Cook carrots until tender in enough salted water to cover (about 10 minutes). Drain.
- Combine remaining ingredients, stirring until well blended. Spoon over cooked carrots and toss well.
- Serve immediately. War Eagle!
