My husband and I are big Auburn football fans, so when I see a recipe with War Eagle, Tiger or Auburn in the title it makes me try it. This is a great way to get kids to eat their vegetables. Just a little different than my honey glazed carrots.

Ingredients For war eagle carrots

  • 4 c
    sliced carrots
  • 1 Tbsp
    butter, melted
  • 1/3 c
    apricot preserves
  • 1/4 tsp
    kosher salt
  • 1/4 tsp
    orange zest
  • 1/2 tsp
    freshly grated nutmeg
  • 2 tsp
    freshly squeezed lemon juice

How To Make war eagle carrots

  • 1
    Cook carrots until tender in enough salted water to cover (about 10 minutes). Drain.

    Combine remaining ingredients, stirring until well blended. Spoon over cooked carrots and toss well.
