war eagle carrots
My husband and I are big Auburn football fans, so when I see a recipe with War Eagle, Tiger or Auburn in the title it makes me try it. This is a great way to get kids to eat their vegetables. Just a little different than my honey glazed carrots.

Ingredients
- 4 cups sliced carrots
- 1 tablespoon butter, melted
- 1/3 cup apricot preserves
- 1/4 teaspoon kosher salt
- 1/4 teaspoon orange zest
- 1/2 teaspoon freshly grated nutmeg
- 2 teaspoons freshly squeezed lemon juice
How To Make war eagle carrots

Step 1Cook carrots until tender in enough salted water to cover (about 10 minutes). Drain.

Step 2Combine remaining ingredients, stirring until well blended. Spoon over cooked carrots and toss well.

Step 3Serve immediately. War Eagle!
