Ingredients
- 1 pound fresh beets
- 1/4 cup orange juice
- 1/4 cup sugar
- 2 tablespoons vinegar (white or cider)
- 1 teaspoon orange zest
- 1 tablespoon butter (generous)
How To Make w d's orange sauced beets

Step 1Scrub beets and trim the stems down to 1 inch. Place in boiling water and boil for up to 60 minutes or until tender when pierced all the way through with a sharp knife. Drain and plunge into cold water until cooled. Rub beets between your hands to remove the husk. Chop into bite sized cubes.

Step 2In a sauce pan, whish together the remaining ingredients except butter. Heat over medium heat until sauce comes to a boil and thickens. Turn down heat a swirl in butter. Add beets to sauce and cook until well coated and hot. "This also works well for carrots. I haven't tried it with any other vegies."
