1Scrub beets and trim the stems down to 1 inch.
Place in boiling water and boil for up to 60 minutes or until tender when pierced all the way through with a sharp knife.
Drain and plunge into cold water until cooled.
Rub beets between your hands to remove the husk. Chop into bite sized cubes.
2In a sauce pan, whish together the remaining ingredients except butter.
Heat over medium heat until sauce comes to a boil and thickens.
Turn down heat a swirl in butter.
Add beets to sauce and cook until well coated and hot.
