Will Dodge...."If one aint skeert of artificial sweeteners, granulated Splenda can be substituted for the sugar. That's what I use but then I drinks whiskey too, so I guess you could say I'm not too health conscious."

Ingredients

  • 1 pound fresh beets
  • 1/4 cup orange juice
  • 1/4 cup sugar
  • 2 tablespoons vinegar (white or cider)
  • 1 teaspoon orange zest
  • 1 tablespoon butter (generous)

How To Make w d's orange sauced beets

  • Step 1
    Scrub beets and trim the stems down to 1 inch. Place in boiling water and boil for up to 60 minutes or until tender when pierced all the way through with a sharp knife. Drain and plunge into cold water until cooled. Rub beets between your hands to remove the husk. Chop into bite sized cubes.
  • Step 2
    In a sauce pan, whish together the remaining ingredients except butter. Heat over medium heat until sauce comes to a boil and thickens. Turn down heat a swirl in butter. Add beets to sauce and cook until well coated and hot. "This also works well for carrots. I haven't tried it with any other vegies."
