This recipe belongs to Angeline, which she submitted in her church cookbook. It calls for vidalia onions but I use any kind of onion.

Ingredients

  • 1 stick
    margarine, melted
  • 4 large
    onions, sliced
  • 2
    eggs
  • 1 c
    milk
  • ·
    black pepper, to taste
  • 1 can(s)
    cream of mushroom soup
  • 24
    saltine crackers
  • 1 c
    grated cheese, your choice

How to Make Vidalia Onion Casserole

Step-by-Step

  1. Preheat oven to 350. Melt margarine then saute onions in margarine. Mix in eggs, milk, pepper and soup. Set aside.
  2. Spray casserole dish. Layer crackers in bottom of dish. Pour the onions over crackers and then the egg mixture. Top with cheese. Bake at 350 for approximately 30 minutes.
