This is a delicious side dish, especially on Thanksgiving. Goes well at church pot lucks, too! Make sure folks know it's onions they're eating though ... or there'll be lots of 'waste'. :o)

Ingredients

  • 4
    vidalia onions, peeled and sliced
  • 5 Tbsp
    margarine
  • 1/2 c
    creamed cottage cheese
  • 1/4 c
    light cream cheese
  • 2 medium
    eggs
  • 1 c
    milk
  • ·
    salt and pepper, to taste
  • 2/3 c
    grated parmesan cheese

How to Make Vidalia Onion Casserole

Step-by-Step

  1. Preheat oven to 400°. Spray a baking dish with PAM.
  2. Saute onions in margarine until transparent, not browned. Place onions in prepared baking dish.
  3. Mix together cottage cheese and cream cheese; set aside.
  4. Beat eggs; mix in milk.
  5. Combine with cheeses and salt and pepper. Pour over onions and sprinkle with parmesan.
  6. Bake for 25 minutes, or until golden brown.
