This is a delicious side dish, especially on Thanksgiving. Goes well at church pot lucks, too! Make sure folks know it's onions they're eating though ... or there'll be lots of 'waste'. :o)

Ingredients
- 4 - vidalia onions, peeled and sliced
- 5 tablespoons margarine
- 1/2 cup creamed cottage cheese
- 1/4 cup light cream cheese
- 2 medium eggs
- 1 cup milk
- - salt and pepper, to taste
- 2/3 cup grated parmesan cheese
How To Make vidalia onion casserole

Step 1Preheat oven to 400°. Spray a baking dish with PAM.

Step 2Saute onions in margarine until transparent, not browned. Place onions in prepared baking dish.

Step 3Mix together cottage cheese and cream cheese; set aside.

Step 4Beat eggs; mix in milk.

Step 5Combine with cheeses and salt and pepper. Pour over onions and sprinkle with parmesan.

Step 6Bake for 25 minutes, or until golden brown.
