Ingredients

  • 3 tablespoons Low Sodium soy sauce
  • 1/2 cup Vegetable Broth
  • 2 teaspoons Sesame Oil
  • 1 tablespoon Ginger Root, minced
  • 3 - Garlic Cloves, minced
  • 1 cup Chopped Broccoli - can use fozen
  • 1 cup Carrots, diced - can use frozen
  • 1 cup Celery, sliced diagonally
  • 1 1/2 cups Bean Sprouts
  • 1 cup Mushrooms, sliced - I use canned
  • 4 cups Rice, cooked - I use Minute Rice
  • 1 - egg, beaten
  • 6 - bok choy -- about 6 stalks chopped
  • 1 can small can if baby peas

How To Make veggie fried rice recipe

  • Step 1
    In a small bowl, mix together the soy sauce and broth. Heat oil until hot in a wok. Add the ginger and garlic and stir-fry for 2 minutes. Add the broccoli and carrots, bol choy, and continue to stir-fry for 5 minutes over medium heat. Add the celery and stir-fry for 5 minutes, then add the peas, sprouts and mushrooms for another 1 minute. Add the rice and and beaten egg, continue to stir-fry until the rice is thoroughly heated.
