Tian is not a formal word but translated mean "Heaven". This is a Ina Garten recipe and it is scrumptious. We made this at our community kitchen many times...does not freeze well though. *borrowed pic

Ingredients

  • - good olive oil
  • 2 large onions, sliced
  • 2 cloves garlic minced
  • 1 pound medium potatoes , washed and unpeeled
  • 3/4 pound zucchini
  • 1 1/3 pounds tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves....i have used dried and it works too
  • 2 ounces grated gruyere cheese

How To Make vegetable tian

  • Step 1
    Preheat oven to 375. Grease a 9 x 13 pan with olive oil. In a fry pan saute 2 tbsps olive oil and cook the onions over med-low heat for 8 - 10 mins, until translucent. Add the garlic and cook another minute or so. Spread the onion mixture in the bottom of the pan, Slice potatoes, tomatoes and zucchini in 1/4 inch slices . Layer them alternately on top of the onions...making sure they fir tight but only one layer. Sprinkle with s/p to taste, thyme leaves and drizzle with 1 tbsp of olive oil. Cover with foil and cook 35 - 40 mins. Uncover, sprinkle with cheese and bake another 30 mins until brown. Serve warm with crusty bread ...we served Bannock with it at the kitchen...so yummy!
