We made this at our community kitchen many times...does not freeze well though.
- good olive oil
- 2 large
- onions, sliced
- 2 clove
- garlic minced
- 1 lb
- medium potatoes , washed and unpeeled
- 3/4 lb
- 1 1/3 lb
- 1 tsp
- 1/2 tsp
- black pepper
- 1 Tbsp
- fresh thyme leaves....i have used dried and it works too
- 2 oz
- grated gruyere cheese
Grease a 9 x 13 pan with olive oil.
In a fry pan saute 2 tbsps olive oil and cook the onions over med-low heat for 8 - 10 mins, until translucent.
Add the garlic and cook another minute or so.
Spread the onion mixture in the bottom of the pan, Slice potatoes, tomatoes and zucchini in 1/4 inch slices . Layer them alternately on top of the onions...making sure they fir tight but only one layer.
Sprinkle with s/p to taste, thyme leaves and drizzle with 1 tbsp of olive oil.
Cover with foil and cook 35 - 40 mins. Uncover, sprinkle with cheese and bake another 30 mins until brown.
Serve warm with crusty bread ...we served Bannock with it at the kitchen...so yummy!
