With the economy being so tough today, I always look for ways to prepare good meals using the least expensive means possible. We all just love this soup and it has a million possibilities ! You can have it simple, as is...or add what ever meat you prefer ~ chicken, ham, beef. There's so much room for alterations and it always seems to come out wonderful. So, give this basic soup a try, and get creative !!

Ingredients
- 3 quarts water
- 1 cup sliced carrots
- 1 - head of cabbage
- 2 cups diced potatoes - not too small or they will cook too fast
- 1 can tomatoe sauce
- 1 large chopped onion
- 2 cups stock
- 2 - bay leaves
- 2 teaspoons salt
- 6 - peppercorns
- 4 tablespoons chopped parsley
- 2 pounds meat - if preferred
How To Make vegetable soup

Step 1Heat onion, salt, bay leaf and peppercorns, and 3/4 of the parsley with the tomato sauce (and meat if using) for 20 minutes.

Step 2Quarter cabbage and remove core. Pour stock into your large pot of water and add the cabbage, carrots and potatoes. Medium heat is best to get the soup started while waiting for the other ingredients.

Step 3Add cooked ingredients to water. Cover and cook slowly for 1 to 1 1/2 hours. To ensure everything is cooked, test a carrot, potato and cabbage. Once done, and ready to serve, sprinkle in the remaining fresh parsley.
