vegetable medley
A man walks into a doctor’s office. He has Brussels sprouts up his nose, a bell pepper in his left ear and a onion in his right ear. “What’s the matter with me?” he asks the doctor. The doctor replies, “You’re not eating properly.” I make this dish with chicken too. Just brown chicken on all sides, remove from pan and prepare the veggies...return chicken to the pan with the broth and simmer for 30 minutes on low-cover on. ;)

Ingredients
- 1 tablespoon olive oil
- 2 tablespoons crushed garlic
- 4 cups cut up vegetables (i used bell peppers, onions, brussels sprouts and mushrooms)
- 1/2 teaspoon salt
- 1/4 teaspoon garlic salt (did i say we love garlic?)
- 1/4 teaspoon cayenne, paprika or chili powder
- 1/2 teaspoon pepper
- 1/4 teaspoon onion powder
- - or substitute a vegetable seasoning for all spices listed above.
- 1 cup chicken broth
How To Make vegetable medley

Step 1Heat the oil over medium-high heat. Add the crushed garlic and onion.

Step 2Add the vegetables. Season with spices and stir-fry until they're tender-crisp.

Step 3Add the chicken broth. Turn heat to low and cover. Simmer until vegetables are tender. Approximately 15 minutes
