  • 3 medium
    white potatoes, peeled and cubed
  • 1 large
    red bell pepper, seeded and diced
  • 1 small
    butternut squash, peeled and cubed
  • 1 medium
    sweet potato peeled and cubed
  • 1 medium
    red onion, cut in wedges
  • 3 Tbsp
    olive oil
  • 2 Tbsp
  • 2 Tbsp
    minced freshrosemary
  • 1 Tbsp
    minced fresh thyme
  • 1/2 tsp
  • 1/2 tsp

How to Make Vegetable Medley


  1. Preheat oven to 425 degrees.
  2. In a large bowl, combine the vegetables.
  3. In a small bowl, whisk together the oil, vinegar and seasonings.
  4. Pour the oil mixture over the vegetables and toss gently to coat.
  5. Place the coated vegetables on a jelly roll pan.
  6. Bake uncovered for 30 minutes or until tender, stirring occasionally.
