This is a recipe I got from my friend Terry several years ago. We have these veggies at least once a month.

Ingredients
- 3 medium white potatoes, peeled and cubed
- 1 large red bell pepper, seeded and diced
- 1 small butternut squash, peeled and cubed
- 1 medium sweet potato peeled and cubed
- 1 medium red onion, cut in wedges
- 3 tablespoons olive oil
- 2 tablespoons vinegar
- 2 tablespoons minced freshrosemary
- 1 tablespoon minced fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
How To Make vegetable medley

Step 1Preheat oven to 425 degrees.

Step 2In a large bowl, combine the vegetables.

Step 3In a small bowl, whisk together the oil, vinegar and seasonings.

Step 4Pour the oil mixture over the vegetables and toss gently to coat.

Step 5Place the coated vegetables on a jelly roll pan.

Step 6Bake uncovered for 30 minutes or until tender, stirring occasionally.
