This light stir fry garden vegetable salad medley, is one that will be enjoyed many a time, because of it's flavors, with broiled Fish or Keilbasa sausage or another main too ~ a winning combination!

Ingredients

  • 1 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 1 small
    chopped onion
  • 1.5 lb
    yellow squash, thinly sliced
  • 10 oz
    frozen peas, thawed
  • 1 c
    shredded carrots
  • 3/4 c
    chicken broth
  • 1/4 tsp
    salt
  • tsp
    pepper

How to Make Vegetable Medley

Step-by-Step

  1. In large skillet, heat butter and oil over medium-high heat; add onion, and cook until soft, about 5 minutes.
  2. Stir in squash, and cook 10 minutes, stirring frequently.
  3. Add peas, carrots, broth, salt and pepper; cook, stirring frequently, until squash is cooked.
