Ingredients For vegetable kugel

  • 1 pkg
    frozen cauliflower or broccoli
  • 3 Tbsp
    margarine
  • 3 Tbsp
    flour
  • 1/2 c
    coffee rich
  • 1/2 c
    water
  • 3
    eggs
  • 1/2 c
    mayonnaise
  • 1 Tbsp
    onion soup mix
  • salt and pepper to taste
  • breadcrumbs (optional)

How To Make vegetable kugel

  • 1
    Cook cauliflower and drain well.
  • 2
    Melt margarine in a saucepan and add flour, Coffee Rich and water. Stir over medium heat for 10 minutes until flour is dissolved.

    Pour sauce over cauliflower. Add eggs, mayonnaise and onion soup mix.

    Pour mixture into greased 3 quart baking pan. May sprinkle bread crumbs on top.

    Bake for 1 hour at 350 degrees.
