Ingredients
- 1 package frozen cauliflower or broccoli
- 3 tablespoons margarine
- 3 tablespoons flour
- 1/2 cup coffee rich
- 1/2 cup water
- 3 - eggs
- 1/2 cup mayonnaise
- 1 tablespoon onion soup mix
- - salt and pepper to taste
- - breadcrumbs (optional)
How To Make vegetable kugel

Step 1Cook cauliflower and drain well.

Step 2Melt margarine in a saucepan and add flour, Coffee Rich and water. Stir over medium heat for 10 minutes until flour is dissolved.

Step 3Pour sauce over cauliflower. Add eggs, mayonnaise and onion soup mix.

Step 4Pour mixture into greased 3 quart baking pan. May sprinkle bread crumbs on top.

Step 5Bake for 1 hour at 350 degrees.
