Ingredients

  • 2 pounds sweet potatoes, cleaned
  • 3/4 cup heavy cream
  • 1 vanilla bean, split lengthwise seeds scraped out
  • 1 tablespoon grated orange zest
  • 3 tablespoons butter, room temp
  • salt and white pepper

How To Make vanilla sweet potato puree

  • Step 1
    Preheat oven to 350 degrees. Place the cleaned sweet potatoes on a baking sheet and bake for about 1 hour.
  • Step 2
    Remove and let cool for about 10 to 15 minutes.
  • Step 3
    Place the heavy cream, vanilla bean, and orange zest in a saucepan and cook for 5 minutes. Remove the vanilla bean.
  • Step 4
    Peel the skin off the sweet potatoes and add the flesh to a food processor.
  • Step 5
    Pour the hot heavy cream over the top of the potatoes and add the butter.
  • Step 6
    Process until silky smooth. Taste and season with salt and white pepper.
