Ingredients
- 2 pounds sweet potatoes, cleaned
- 3/4 cup heavy cream
- 1 vanilla bean, split lengthwise seeds scraped out
- 1 tablespoon grated orange zest
- 3 tablespoons butter, room temp
- salt and white pepper
How To Make vanilla sweet potato puree

Step 1Preheat oven to 350 degrees. Place the cleaned sweet potatoes on a baking sheet and bake for about 1 hour.

Step 2Remove and let cool for about 10 to 15 minutes.

Step 3Place the heavy cream, vanilla bean, and orange zest in a saucepan and cook for 5 minutes. Remove the vanilla bean.

Step 4Peel the skin off the sweet potatoes and add the flesh to a food processor.

Step 5Pour the hot heavy cream over the top of the potatoes and add the butter.

Step 6Process until silky smooth. Taste and season with salt and white pepper.
