va-va-voom veggie casserole

Va va voom is right. I'm not a big fan of mixed veggies but this recipe changed my mind at the first bite. Every time I make it, I have copies of the recipe ready so that I can hand them out to the many who ask for it.

Ingredients
- 2 cans veg-all, drained
- 1 can water chestnuts, drained
- 1/2 cup onions, chopped fine
- 3/4 cup mayonnaise
- 1 cup cheddar cheese, grated
- TOPPING
- 1 1/8 packages (sleeve) ritz crackers, crushed
- 1 1/4 cups butter, melted
How To Make va-va-voom veggie casserole

Step 1Mix first five ingredients together and pour into a greased casserole dish.

Step 2Sprinkle crushed Ritz crackers over the top, then pour melted butter over the crackers.

Step 3Bake at 350 degrees for 25 minutes or until bubbly around the edges.

Step 4Note: our family motto is, "if a little cheese is good, a lotta cheese is better," so feel free to add extra cheddar (we like sharp), but seriously, don't overdo it.
