Ingredients
- 4-6 large green bell peppers
- 1/2-3/4 pound ground turkey
- 1 small onion, finely chopped
- 1 rib celery, finely chopped
- 1/2 cup long-grain rice
- salt and freshly ground pepper to taste
- 2 cups canned tomato sauce
- 1 cup shredded cheddar cheese
- 1/2 cup dry white wine, chicken stock, or water
How To Make turkey-stuffed peppers
-
Step 1Cut the tops off the bell peppers and scoop out the seeds and ribs. Stand the peppers upright in a deep baking dish big enough to hold them snugly.
-
Step 2Combine the uncooked turkey, onion, celery, rice, salt, pepper, half the tomato sauce, and half the cheese in a bowl and mix well.
-
Step 3Stuff the peppers with the turkey mixture. Combine the remaining tomato sauce and wine and pour over and around the peppers.
-
Step 4Top with the remaining cheese and bake covered in a preheated 400F (200C) oven for 45 minutes.
-
Step 5Remove the cover, reduce the temperature to 350F (180C), and cook until the rice is tender, about 30 minutes, basting the peppers occasionally with the sauce.
