Ingredients

  • 4-6 large green bell peppers
  • 1/2-3/4 pound ground turkey
  • 1 small onion, finely chopped
  • 1 rib celery, finely chopped
  • 1/2 cup long-grain rice
  • salt and freshly ground pepper to taste

  • 2 cups canned tomato sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup dry white wine, chicken stock, or water

How To Make turkey-stuffed peppers

  • Step 1
Cut the tops off the bell peppers and scoop out the seeds and ribs. Stand the peppers upright in a deep baking dish big enough to hold them snugly.
  • Step 2
Combine the uncooked turkey, onion, celery, rice, salt, pepper, half the tomato sauce, and half the cheese in a bowl and mix well.
  • Step 3
Stuff the peppers with the turkey mixture. Combine the remaining tomato sauce and wine and pour over and around the peppers.
  • Step 4
Top with the remaining cheese and bake covered in a preheated 400F (200C) oven for 45 minutes.
  • Step 5
Remove the cover, reduce the temperature to 350F (180C), and cook until the rice is tender, about 30 minutes, basting the peppers occasionally with the sauce.
