This is an extremally easy way to fry those garden eggplants.

Ingredients

  • 4 tablespoons canola oil
  • 1 large eggplant, sliced thin
  • Egg Beater - equivalent to 3 lg eggs
  • 2 cups italian-style bread crumbs

How To Make too easy fried eggplant

  • Step 1
    Heat oil in lg skillet over med-high heat. Blot eggplant slices w/ a paper towel. Dip eggplant slices into Egg Beaters, then coat w/ crumbs. Fry for about 3 min each side, or until golden brown. Drain on paper towels. I serve w/ tomato sauce for dipping.
