I love the fresh tomatoes of summer! Use them every chance I get. Here's a quick, easy, good side dish for summer menus. My family & friends love it!

Ingredients For tomatoe's in balsamic

  • 10
    roma or other tomatoes/cut up in 1/4's (bite size)
  • 1/2 md
    red onion (chopped - not too fine)
  • 1/2-1 c
    feta cheese
  • balsamic vinegar to "coat" ingredients

How To Make tomatoe's in balsamic

    Cut up tomatoes, place in an air-tight container, cut up onion and add, (can also add thinly sliced cucumbers and kalamatra or black olives), feta cheese (or mozzarella), sprinkle w/balsamic until "coated" not drenched. Sprinkle w/sea salt & freshly ground pepper to taste. Place in refrigerator to get cold - stir occasionally if you have the time (let marinate 1 hour). Enjoy!
