tomato surprise
I GOT THIS RECIPE OUT OF AN OLD MAGAZINE AND TRIED IT. I THOUGHT MY SON WAS GOING TO EAT ALL OF THEM BEFORE DINNER. IT MAKES STORE BOUGHT TOMATOES GREAT. I AM NOT BIG FAN OF STORE BOUGHT TOMATOES BUT WAS PLESANTLY SURPRISE WITH THIS ONE.

When I read this recipe I knew I would like it. As it turns out, we ALL loved it (even my mother-in-law who is hard to impress!) The sweetness of the tomato and the creaminess of the cheeses is a perfect combination. You can bet I will be making these again!!

- 4 large tomatoes skin on sliced a little over an 1/2 inch thick
- 1/2 cup ricotta cheese
- 1 cup mozzarella cheese shredded
- 1/2 cup parmesan cheese
- 1/4 cup good mayonaise
- - salt and pepper to taste

Step 1PREHEAT OVEN TO 350 SLICE TOMATOES AND PLACE ON AN SPRAYED BAKING PAN(ONE WITH SIDES)SALT AND PEPPER TOMATOES TO TASTE. IN A BOWL MIX CHEESES AND MAYONAISE. PLACE ONE TEASPOON OF MIXTURE ON A SLICE OF TOMATOE. BAKE TILL BUBBLEY. AROUND 10 TO 15 MINUTES

Step 2I USE THIS IN PLACE OF AN SALAD WHEN GRILLING STEAKS OR USE AS AN SIDE WITH A MEAL.
