I GOT THIS RECIPE OUT OF AN OLD MAGAZINE AND TRIED IT. I THOUGHT MY SON WAS GOING TO EAT ALL OF THEM BEFORE DINNER. IT MAKES STORE BOUGHT TOMATOES GREAT. I AM NOT BIG FAN OF STORE BOUGHT TOMATOES BUT WAS PLESANTLY SURPRISE WITH THIS ONE.

When I read this recipe I knew I would like it. As it turns out, we ALL loved it (even my mother-in-law who is hard to impress!) The sweetness of the tomato and the creaminess of the cheeses is a perfect combination. You can bet I will be making these again!!

Ingredients

  • 4 large tomatoes skin on sliced a little over an 1/2 inch thick
  • 1/2 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup parmesan cheese
  • 1/4 cup good mayonaise
  • - salt and pepper to taste

How To Make tomato surprise

  • Step 1
    PREHEAT OVEN TO 350 SLICE TOMATOES AND PLACE ON AN SPRAYED BAKING PAN(ONE WITH SIDES)SALT AND PEPPER TOMATOES TO TASTE. IN A BOWL MIX CHEESES AND MAYONAISE. PLACE ONE TEASPOON OF MIXTURE ON A SLICE OF TOMATOE. BAKE TILL BUBBLEY. AROUND 10 TO 15 MINUTES
  • Step 2
    I USE THIS IN PLACE OF AN SALAD WHEN GRILLING STEAKS OR USE AS AN SIDE WITH A MEAL.
