Ingredients

4large ripe tomatoes, cut into 1/2-inch wedges

1small jalapeno chile, seeded and minced

2 Tbspfresh ginger, peeled and minced

2 Tbspfresh lemon juice + zest of 1 lemon

2 Tbspextra-virgin olive oil

·season with coarse salt and ground pepper
How to Make Tomato Salad
- In a large bowl toss all ingredients together and chill for at least one hour before serving. Serves four.
