3 to 5 tomatoes
salt to taste
1 small onion, chopped
1 unbaked 9 inch pie shell
1 t. lemon juice
3 to 4 t. chopped fresh basil
pepper to taste
1 cup mayonnaise
1 1/2 cups shredded sharp cheddar cheese, 6 oz


1Slice tomatoes and sprinkle with salt. Let stand to drain for 20 minutes. Pat
dry with paper towels. Sprinkle onion in pie shell. Layer tomatoes over the
onion. Drizzle with lemon juice and sprinkle with basil, salt and pepper. Mix
mayonnaise and cheese in a bowl. Mix well. Spread over tomatoes. Bake at 350 for
30 to 45 minutes or until brown on top. Cut into wedges to serve.
