This recipe was found in a local magazine while visiting Hilton Head Island one summer. We added our own twist to the recipe. It is so yummy. It has become a summer favorite. Of course you need to use Duke's Mayonnaise if making this in the south :-)

Ingredients

  • 1
    9 inch deep dish frozen pie shell
  • 4 large
    ripe tomatoes-sliced
  • 3/4 c
    dukes mayonnaise (other nonfat mayonnaise will work)
  • 3/4 c
    shredded cheddar cheese
  • 3/4 c
    shredded mozzarella cheese
  • 1/3 c
    fresh basil chopped
  • 1/4 c
    either mozzarella or cheddar cheese-shredded for bottom of pie shell
  • ***PREHEAT OVEN TO 400 DEGREES***

How to Make Tomato Pie

Step-by-Step

  1. Sprinkle a small amount of shredded cheese (about 1/4 cup) in the bottom of the pie shell. Pre-bake the pie shell for 5 minutes in a preheated 400 degree oven. Remove from oven, layer slices of tomato and basil in the pre-baked pie shell.
  2. Mix the mayonnaise and cheese. Spread the mayonnaise mixture on top of the tomatoes. Bake at 400 degrees for approximately 35 minutes until golden brown on top.
