This recipe was found in a local magazine while visiting Hilton Head Island one summer. We added our own twist to the recipe. It is so yummy. It has become a summer favorite. Of course you need to use Duke's Mayonnaise if making this in the south :-)

Ingredients For tomato pie

  • 1
    9 inch deep dish frozen pie shell
  • 4 lg
    ripe tomatoes-sliced
  • 3/4 c
    dukes mayonnaise (other nonfat mayonnaise will work)
  • 3/4 c
    shredded cheddar cheese
  • 3/4 c
    shredded mozzarella cheese
  • 1/3 c
    fresh basil chopped
  • 1/4 c
    either mozzarella or cheddar cheese-shredded for bottom of pie shell
  • ***PREHEAT OVEN TO 400 DEGREES***

How To Make tomato pie

    Sprinkle a small amount of shredded cheese (about 1/4 cup) in the bottom of the pie shell. Pre-bake the pie shell for 5 minutes in a preheated 400 degree oven. Remove from oven, layer slices of tomato and basil in the pre-baked pie shell.

    Mix the mayonnaise and cheese. Spread the mayonnaise mixture on top of the tomatoes. Bake at 400 degrees for approximately 35 minutes until golden brown on top.
