This recipe was found while visiting Hilton Head Island one summer. We added our twist to the recipe. It is so yummy. It has become a summer favorite. Of course, you must use Duke's mayonnaise if making this in the South.

Tomato pie is a light and refreshing summertime meal. If you grew up in the South, every family has their take on this classic recipe and Cathie's version is delicious. There's a deep dish crust that leaves a lot of room for the juicy tomato slices. Fresh basil adds a pop of flavor that's classic in summertime dishes. A mixture of mayonnaise, cheddar cheese, and mozzarella cheese binds the savory pie together. This tomato pie will be a nice addition to brunch or a lighter dinner with a side salad.

Ingredients
- 1 - 9 inch deep dish frozen pie shell
- 1/4 cup shredded mozzarella or shredded cheddar cheese
- 4 large ripe tomatoes, sliced
- 1/3 cup fresh basil, chopped
- 3/4 cup Duke's mayonnaise
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
How To Make tomato pie

Step 1Preheat the oven to 400 degrees F.

Step 2Sprinkle about 1/4 cup shredded mozzarella or cheddar cheese in the bottom of the pie shell. Pre-bake the pie shell for 5 minutes in a preheated oven.

Step 3Remove the crust from the oven. Layer the tomato slices and basil in the pie shell.

Step 4Mix the mayonnaise, shredded cheddar, and shredded mozzarella cheese.

Step 5Spread the mayonnaise mixture on top of the tomatoes.

Step 6Bake for approximately 35 minutes or until golden brown on top.
