This recipe was found in a local magazine while visiting Hilton Head Island one summer. We added our own twist to the recipe. It is so yummy. It has become a summer favorite. Of course you need to use Duke's Mayonnaise if making this in the south :-)

Ingredients For tomato pie

19 inch deep dish frozen pie shell

4 lgripe tomatoes-sliced

3/4 cdukes mayonnaise (other nonfat mayonnaise will work)

3/4 cshredded cheddar cheese

3/4 cshredded mozzarella cheese

1/3 cfresh basil chopped
-
1/4 ceither mozzarella or cheddar cheese-shredded for bottom of pie shell
- ***PREHEAT OVEN TO 400 DEGREES***
How To Make tomato pie

1Sprinkle a small amount of shredded cheese (about 1/4 cup) in the bottom of the pie shell. Pre-bake the pie shell for 5 minutes in a preheated 400 degree oven. Remove from oven, layer slices of tomato and basil in the pre-baked pie shell.

2Mix the mayonnaise and cheese. Spread the mayonnaise mixture on top of the tomatoes. Bake at 400 degrees for approximately 35 minutes until golden brown on top.
