This is a recipe from a dear friend. I have had this dish at her house many time and it is delish!

pre-baked pie shell
4 medium
tomatoes peeled, sliced, drained
fresh basil leaves, chopped
1/4 c
chopped onion
1 c
shredded mozarella cheese
1 c
1/4 c
parmesan cheese
salt & pepper

How to Make Tomato Pie


  • 1Bake pie shell.
  • 2Peel and slice tomatoes. Drain in colander for 10 minutes.
  • 3Layer tomatoes, basil and onion in pre-baked pie shell. Season with salt and pepper.
  • 4Combine mayonnaise and mozarella and parmesan cheeses. Spread over tomatoes.
  • 5Bake at 350 degrees until browned 30-35 minutes.
