I tried this when I was tired of canning .. worked out great.

Ingredients

  • 4 to 5 medium tomatoes
  • 10 - fresh basil leavs chopped
  • 1/2 cup green onions chopped
  • 1 - 9 inch pie crust
  • 1 cup grated mozzarella cheese
  • 1 cup grated cheddar cheese
  • 1 cup mayo/ or ranch dressing use 3/4 c.. i have used ranch dry pck with sour cream and it is very good too
  • - salt & pepper to taste use a lot

How To Make tomato pie

  • Step 1
    Pre bake crust .. Preheat oven to 350 degrees Place the tomatoes in a colander in the sink in 1 layer Sprinkle with salt and allow to drain for about 1 hour
  • Step 2
    Layer the tomato slices, basil and onion in the pie shell Season with salt and pepper
  • Step 3
    Combine the grated cheese and mayonnaise together in small bowl.Spread cheese mixture on top of the tomatoes and bake for 30-40 minutes or until golden brown Cut into 8 slices and serve warm
