My daughter in law and I love this recipe.I had clipped it from an old news paper years ago.Hope you enjoy it.

Ingredients

  • 2 large purple onions
  • 1/4 cup plus 2tea.butter
  • 1 [6oz] package croutons, plain
  • 6 large tomatoes,sliced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried basil
  • 3 cups monterey jack cheese

How To Make tomato-cheese casserole

  • Step 1
    In a large skillet,saute'onions in butter for 5 minutes.
  • Step 2
    Add croutons and saute 3 minutes
  • Step 3
    Place tomato slices in a bowl.Sprinkle with salt,pepper and basil;toss gently.
  • Step 4
    Spoon half of reserved onion mixture into greased 13 by 9inch baking dish.Arrange half of tomato slices over onion mixture;sprinkle with half of cheese.
  • Step 5
    Repeat layers.
  • Step 6
    Bake, uncovered,at 350 degrees for 35 to 40 minutes until hot and bubbly.
