My daughter in law and I love this recipe.I had clipped it from an old news paper years ago.Hope you enjoy it.

Ingredients

  • 2 large
    purple onions
  • 1/4 c
    plus 2tea.butter
  • 1 [6oz] pkg
    croutons, plain
  • 6 large
    tomatoes,sliced
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    dried basil
  • 3 c
    monterey jack cheese

How to Make Tomato-Cheese Casserole

Step-by-Step

  1. In a large skillet,saute'onions in butter for 5 minutes.
  2. Add croutons and saute 3 minutes
  3. Place tomato slices in a bowl.Sprinkle with salt,pepper and basil;toss gently.
  4. Spoon half of reserved onion mixture into greased 13 by 9inch baking dish.Arrange half of tomato slices over onion mixture;sprinkle with half of cheese.
  5. Repeat layers.
  6. Bake, uncovered,at 350 degrees for 35 to 40 minutes until hot and bubbly.
