- 1 - orange bell pepper
- 2 - zucchinis (7 to 9 inches long)
- 2 cloves garlic, minced
- 4 tablespoons olive oil, extra virgin

How To Make three roast peppers with zucchini

Step 1Preheat oven to 375 degrees. Slice bell peppers into 1/2 inch strips. Combine all vegetables in a large bowl. Add olive oil and toss to coat peppers. Sprinkle garlic powder, salt and pepper and toss again. Pour vegetable mixture into a glass baking dish and bake for 25 minutes or until zucchini turns yellow and vegetables soften to desired tenderness.
