This is my version of a Fancy Green Bean recipe of Paula Dean's. Hers is stir fried,and the sauce was a blend of soy sauce & honey.I changed it slightly when I was cooking a large dinner & didn't have time to hang over the beans while they were cooking on the stove top, so I put them on a baking sheet & put them in a hot oven while I continued cooking the rest of dinner. when it came time to put together the sauce, I discovered I was out of honey so I substituted hoisin sauce instead, and the rest is history. My family and friends love them and I always get asked for the recipe. I hope you all enjoy them as much as my family does.

Ingredients

  • 1 1/2 - 2 pounds fresh green beans (trim off stems)
  • 1 cup thinly sliced sweet onions (vidalia or walla walla sweets)
  • 1/2 cup diced red bell pepper
  • 2-3 - cloves of fresh garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 2 - slices of bacon (cooked crisp & crumbled)
  • 1/2 cup cashews or almonds (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce

How To Make terrie's fancy green beans

  • Step 1
    Preheat Oven to 400 degrees farenheit. In a large pot over high heat, bring 5 quarts of water to a boil. Add the cleaned and trimmed green beans and let cook for 3 minutes, until the beans turn bright green. Drain the beans and plunge them directly into ice water to stop the cooking. Drain and put onto a flat baking sheet (like a jelly roll pan or cookie sheet)that has been lightly greased with some bacon grease. Add the onions, garlic and red bell pepper. Toss all the vegetables together with the olive oil. Add some salt & pepper. Put into oven and let cook about 15 minutes, then turn the beans with spatula to allow the vegetables to carmelize. Let them cook about 10 more minutes then add the bacon & the nuts. Add the sauce mixture & serve.

    Sauce: mix together the soy sauce and the hoisin sauce.
