Ingredients
- 2 bunches collard greens
- 2 medium smoked ham hocks
- 1 large white/yellow onion
- 2 tablespoons olive oil
- 3 cloves garlic
- 2 large bay leaves
- 1 medium carrot
- 2 tablespoons apple cider vinegar
- 2 quarts chicken stock
- 2 tablespoons honey or molasses
- salt and black pepper
How To Make tdaddy's southern slow cooked collard greens

Step 1Thoroughly wash the greens to remove any dirt/sand/silt. You may also use 2 -16oz bags of pre-packaged collard greens. Remove all stems and rough chop the leaves.

Step 2Preheat a large cook pot over medium heat and add the oil. Chop the onion, garlic, and carrot and add to the pot. Now add the bay leaves and smoked ham hocks. Stir together and cook 8 to 10 minutes until the onion is soft.

Step 3Add the collard greens, broth, vinegar, and honey. Pack the greens and turn until they are wilted. Bring to a boil and stir to turn the greens .

Step 4Reduce the heat and cover the pot and cook for approximately 50 minutes. Taste the liquid and season with salt and pepper to taste. Cover again and cook for approximately 15 minutes.

Step 5Pull any loose meat from the ham hocks and stir into the greens. Remove the bay leaves and you are ready to serve.

Step 6It is best to serve in bowls with an ample amount of the juice. Enjoy.
