Tasty Carrot Balls

You can make them with or without the cheese - they are good both ways.
Try it, you just might like it!
Ingredients

2 ccooked and mashed carrots

1/2 cgrated cheddar cheese, mild, optional

2eggs, slightly beaten
-
1/2 tspsalt
-
1/4 tsppepper
-
2 Tbsponion, grated

1/2 csoft bread crumbs

·butter and/or oil
How to Make Tasty Carrot Balls
- Combine all ingredients, except bread crumbs, eggs and butter/oil. Shape into balls about 1 and 1/2 inch in diameter.
- Roll carrot balls in egg, then coat with bread crumbs.
- Fry in a little butter and/or oil until browned and heated through. Drain on paper towels.
