These carrot balls are indeed tasty, and a little-bit-different way of serving a vegetable that can be a bit boring, at times! You can make them with or without the cheese - they are good both ways. Try it, you just might like it!

Ingredients
- 2 cups cooked and mashed carrots
- 1/2 cup grated cheddar cheese, mild, optional
- 2 - eggs, slightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons onion, grated
- 1/2 cup soft bread crumbs
- - butter and/or oil
How To Make tasty carrot balls

Step 1Combine all ingredients, except bread crumbs, eggs and butter/oil. Shape into balls about 1 and 1/2 inch in diameter.

Step 2Roll carrot balls in egg, then coat with bread crumbs.

Step 3Fry in a little butter and/or oil until browned and heated through. Drain on paper towels.
