These carrot balls are indeed tasty, and a little-bit-different way of serving a vegetable that can be a bit boring, at times!

You can make them with or without the cheese - they are good both ways.

Ingredients

  • 2 c
    cooked and mashed carrots
  • 1/2 c
    grated cheddar cheese, mild, optional
  • 2
    eggs, slightly beaten
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 Tbsp
    onion, grated
  • 1/2 c
    soft bread crumbs
  • ·
    butter and/or oil

How to Make Tasty Carrot Balls

Step-by-Step

  1. Combine all ingredients, except bread crumbs, eggs and butter/oil. Shape into balls about 1 and 1/2 inch in diameter.
  2. Roll carrot balls in egg, then coat with bread crumbs.
  3. Fry in a little butter and/or oil until browned and heated through. Drain on paper towels.
