One of my favorite vegetables is corn prepared any way. When I found this recipe, I was very excited as it includes bacon as well as the corn and how could you go wrong! Full of creaminess flavor!

Ingredients

  • 3 slices bacon
  • 16 ounces frozen corn, thawed and patted dry
  • 2 teaspoons cornstarch
  • 1 teaspoon sugar
  • 3/4 cup heavy whipping cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped green onion

  • Step 1
    In a skillet, cook bacon over medium heat until crisp. Remove bacon, reserving 2 tablespoons bacon fat in skillet. Set bacon aside to cool; crumble. Add corn to skillet; cook, stirring frequently for five minutes. Sprinkle cornstarch and sugar over corn; stir in cream.
  • Step 2
    Bring to a boil over medium-high heat, stirring frequently. Reduce heat to medium-low; simmer for two minutes. Stir and salt and pepper. Remove from heat. Sprinkle bacon and green onion over corn mixture. Serve immediately. This would also be good with fresh corn off the cob. ENJOY!
