Ingredients

  • 1 1/4 pounds carrots, peeled, halved lengthwise and sliced on the diagonal (1/2" slices)
  • 1 tablespoon honey
  • 1/2 tablespoon fresh lemon juice
  • 1 teaspoon dijon mustard
  • 1 1/2 teaspoons curry powder
  • 2 tablespoons oil
  • 1/2 tablespoon unsalted butter
  • 1/2 tablespoon light brown sugar
  • 1/2 cup golden raisins

How To Make sweet & tangy carrots

  • Step 1
    In a steamer basket, steam carrots for approx. 10 minutes - remove from heat.
  • Step 2
    In a mixing bowl, combine honey, lemon juice, mustard and curry powder.
  • Step 3
    In a skillet, saute carrots for 2 minutes in butter over medium-high heat. Sprinkle brown sugar over carrots and stir to combine. Add raisins and cook for another 2 minutes, stirring constantly.
  • Step 4
    Add honey mixture and cook carrots for 3 additional minutes. Serve immediately.
