Ingredients
- 1 1/4 pounds carrots, peeled, halved lengthwise and sliced on the diagonal (1/2" slices)
- 1 tablespoon honey
- 1/2 tablespoon fresh lemon juice
- 1 teaspoon dijon mustard
- 1 1/2 teaspoons curry powder
- 2 tablespoons oil
- 1/2 tablespoon unsalted butter
- 1/2 tablespoon light brown sugar
- 1/2 cup golden raisins
How To Make sweet & tangy carrots

Step 1In a steamer basket, steam carrots for approx. 10 minutes - remove from heat.

Step 2In a mixing bowl, combine honey, lemon juice, mustard and curry powder.

Step 3In a skillet, saute carrots for 2 minutes in butter over medium-high heat. Sprinkle brown sugar over carrots and stir to combine. Add raisins and cook for another 2 minutes, stirring constantly.

Step 4Add honey mixture and cook carrots for 3 additional minutes. Serve immediately.
