This is a little different take on the standard sweet potato dish.

  • ·
    1/2 cup sour cream or plain yogurt
  • ·
    1 tbsp. maple syrup
  • ·
    2 t. minced seeded jalapeno chiles
  • ·
    1 t. fresh lime juice
  • ·
    salt to taste
  • ·
    tabasco sauce to taste
  • ·
    4 sweet potatoes
  • ·
    vegetable oil
  • ·
    bacon bits
  • ·
    chopped green onions

How to Make Sweet Potatoes with Maple Jalapeno Sour Cream


  1. Mix the sour cream, maple syrup, jalapeño chiles and lime juice in a bowl.
    Season with salt and Tabasco sauce and mix well. Chill until cold. Rub the sweet
    potatoes with oil and sprinkle with salt. Bake directly on a rack in preheated
    450 oven for 40 to 45 minutes or until tender. Slice potatoes in half lengthwise
    and serve with maple jalapeno sour cream, bacon bits and green onions.
    Serves 4
