Quick and easy recipe for weekday sweet potatoes using fresh or canned. Of course, you can still add marshmallows, if you want! =^..^=

Ingredients For sweet potato bake

4larger sweet potatoes or 1 large can, drained

4 Tbspbutter

1/2 corange juice (or water)

1/2 cbrown sugar, firmly packed

How To Make sweet potato bake

1Prepare the sweet potatoes. If you’re short on time, nuke them in the microwave. See Step #2. When I have time, I like how sweet potatoes peel after being baked.

2If you have raw sweet potatoes, scrub them, pierce with a fork and cook them somehow. (1) Bake at 350°F for an hour or so, on a baking sheet to prevent drips, until cooked through. Peel and cut off the “whiskery ends.” OR (2) Microwave for 8-10 minutes, until fork-tender. Cut off the “whiskery ends” as you remove the peelings. OR (3) Cook sweet potatoes in boiling water until fork-tender, about 20-25 minutes. Peel and cut off the “whiskery ends.” If using canned sweet potatoes, drain the canning syrup and cut off the “whiskey ends.”

3In the meantime, make the syrup. In a smaller saucepan, stir together the butter, orange juice (or water), and brown sugar over medium heat until the butter melts and the brown sugar dissolves, about 5 minutes. Remove from heat.

4Mist a 13 X 9” baking dish with cooking spray or butter well. Slice sweet potatoes into thicker slices and arrange in the baking dish.

5Pour the syrup evenly over the sweet potatoes.

6Sprinkle with cinnamon, if desired.

7Raise oven temperature to 400°F, if you baked the sweet potatoes earlier. Bake for 12-15 minutes until syrup is bubbling and sweet potatoes are heated through. Serve and enjoy! =^..^=

8Wait! You want marshmallows on top? Grab a handful or so and sprinkle over the finished sweet potatoes, or even half of them. Bake another 4-5 minutes, until marshmallows are browned just the way you like them.
