I got this recipe several years ago from a co-worker who brought this dish to a pot-luck. Because it was "carrot salad" it went largely untouched. What a wonderfully pleasant surprise when I finally got the gumption to give it a taste!!!

2 Tbsp
lemon juice
2 Tbsp
brown sugar
1/4 c
1 Tbsp
honey mustard
1 tsp
asian dark sesame oil
salt and pepper
2 Tbsp
candied ginger, minced
1 lb
peeled and shredded carrots
2 Tbsp
toasted sesame seeds


1Zest the two oranges and set aside. "Supreme" one of the oranges into sections and toss the orange segments with the shredded carrots, orange zest and minced ginger.
2In a separate bowl, sqeeze the juice from the second orange. Add lemon juice and brown sugar and stir until dissolved.
3In another bowl, mix the mayonnaise, honey mustard and sesame oil. Add salt and pepper to taste. Slowly combine the orange and lemon juice mixture in small amounts at a time, whisking it as it is added. Once combined, toss with the shredded carrots.
4Sprinkle the sesame seeds on top.
5Store in refrigerator.
