sweet onion custard

I got this recipe from a friend of my Mom's back in the 1990's. She had just discovered Vidalia onions. This is a wonderful side dish, especially served with beef or grilled foods.

Ingredients

  • 6 medium vadalia or sweet onions, sliced
  • 3 tablespoons butter
  • 1 cup milk
  • 3 large eggs
  • - salt and pepper to taste

How To Make sweet onion custard

  • Step 1
    Using very low heat, saute onions in butter in a large covered skillet for 30 minutes. Onions should brown a bit and carmelize. Cool onions.
  • Step 2
    In a mixing bowl beat together milk and eggs, stir in cooled onions, salt, and pepper. Pour mixture into a buttered casserole dish and bake at 325 degrees until golden brown, about 40-45 minutes.
