sweet onion custard
I got this recipe from a friend of my Mom's back in the 1990's. She had just discovered Vidalia onions. This is a wonderful side dish, especially served with beef or grilled foods.

Ingredients
- 6 medium vadalia or sweet onions, sliced
- 3 tablespoons butter
- 1 cup milk
- 3 large eggs
- - salt and pepper to taste
How To Make sweet onion custard

Step 1Using very low heat, saute onions in butter in a large covered skillet for 30 minutes. Onions should brown a bit and carmelize. Cool onions.

Step 2In a mixing bowl beat together milk and eggs, stir in cooled onions, salt, and pepper. Pour mixture into a buttered casserole dish and bake at 325 degrees until golden brown, about 40-45 minutes.
