This is a great condiment kind of like chow chow. I also like to have this on top Italian Sausage sandwiches.

Ingredients
- 2 cups sugar
- 1 cup cider vinegar (5% acidity)
- 1-2 tablespoon salt
- 7 cups cucumber, unpeeled, thinly sliced (about 2 1/4 pounds)
- 1 cup onion, sliced
- 1 cup green bell pepper, sliced
- 1 cup carrots, sliced
- 1 cup cauliflower flowerets
How To Make sweet 'n' sour veggies

Step 1Combine sugar, cider vinegar, and salt in a large nonmetal container, stirring until the sugar and salt dissolve.

Step 2Add the cucumber and the remaining ingredients; toss gently to combine.

Step 3Cover and chill 24 hours, stirring occasionally. Store in refrigerator. Serve with a slotted spoon.
