My mom is one of 5 siblings. She remembers my grandmother making these as an after school snack. They are sweet and yummy! This recipe makes a large batch - warning.... they are addictive!

- 1 1/3 cups all purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons sugar
- 2/3 cup milk
- 1 - egg
- 1 tablespoon oil
- 1 cup frozen corn
How To Make sweet mini corn bites

Step 1Preheat oil in deep fryer or saucepan to 350 degrees. In a medium mixing bowl combine flour, salt, baking powder and sugar.

Step 2In a small bowl slightly beat egg then add milk and oil. Whisk to combine.

Step 3Add wet mixture to dry ingredients and whisk to combine. Fold in frozen corn.

Step 4Drop by heaping tablespoons into oil a few at a time. Cook until golden brown. Remove and drain on paper towels. While hot sprinkle with salt.

Step 5Left overs can be reheated in 350 oven for 15 minutes. Microwave reheating not recommended - makes them "soggy".
