This has been a recipe that I have been working on for a long time. My hubby likes sweet cornbread and I have been trying to adjust this to his taste. He thinks this is now just right.

Ingredients

  • 1 box
    jiffy cornbread mix
  • 1/2 box
    jiffy white cake mix
  • 2
    eggs, slightly beaten
  • 1 can(s)
    cream corn
  • 1 can(s)
    whole corn, drained
  • 1 stick
    butter, melted
  • 1 c
    cheddar cheese, shredded
  • 1 c
    light sour cream

How to Make Sweet Corn Cassarole

Step-by-Step

  1. Preheat oven to 350. Spray a deep oval cassarole with cooking spray. Quickly mix all ingredients and pour into cassarole dish. Bake at 350 for 1 1/2 hour or until center springs back when touched and toothpick comes out clean. You're looking for a golden brown crust. This is a wonderful side dish for potlucks and family gatherings.
