sweet butternut squash

I created this because what I really wanted was candied sweet potatoes. Since I didn't have any, but a lot of butternut squash I improvised. This turned out so much better than expected! I nearly ate it all before I could snap a pic!

Ingredients

  • 1 small butternut squash, peeled, seeded, and cut into small cubes (about 2 1/2 cups of cubes)
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • freshly grated nutmeg, to taste
  • sea salt, to taste

How To Make sweet butternut squash

  • Step 1
    In a large skillet with a tight fitting lid, melt butter over medium-low heat.
  • Step 2
    Add rest of ingredients and stir well. Cover and cook 15 minutes or until squash is tender.
  • Step 3
    Remove lid, increase temperature to medium to medium-high heat, and let cook for 5 minutes or until juices have thickened quite a bit. To the consistency of a thin syrup.
  • Step 4
    Remove from heat and serve. Enjoy!
