sweet butternut squash
I created this because what I really wanted was candied sweet potatoes. Since I didn't have any, but a lot of butternut squash I improvised. This turned out so much better than expected! I nearly ate it all before I could snap a pic!

Ingredients
- 1 small butternut squash, peeled, seeded, and cut into small cubes (about 2 1/2 cups of cubes)
- 1 tablespoon butter
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 1/2 teaspoon cinnamon
- freshly grated nutmeg, to taste
- sea salt, to taste
How To Make sweet butternut squash

Step 1In a large skillet with a tight fitting lid, melt butter over medium-low heat.

Step 2Add rest of ingredients and stir well. Cover and cook 15 minutes or until squash is tender.

Step 3Remove lid, increase temperature to medium to medium-high heat, and let cook for 5 minutes or until juices have thickened quite a bit. To the consistency of a thin syrup.

Step 4Remove from heat and serve. Enjoy!
