A slaw made with red cabbage is a change from the usual white cabbage slaw and this is really colorful and crunchy.

Ingredients

  • 2 Tbsp
    butter
  • 3/4 tsp
    caraway seeds
  • 2 clove
    minced garlic
  • 4 large
    carrots
  • 3 Tbsp
    each brown sugar and cider vinegar
  • 2
    apples peeled and cut in slices and then cut into match stick size.
  • ·
    juice of 1 lemon
  • 1 large
    sweet yellow pepper cut in match stick pieces
  • 1 c
    chestnuts cut in half
  • 4 c
    red cabbage shredded

How to Make Sweet and Sour Red Cabbage

Step-by-Step

  1. Melt butter in skillet add caraway seeds and garlicand cook for 3 minutes. Peel carrots and shred on large box grater, add carrots, pepper, and cook 2 minutes add 1/4 cup water, brown sugar and vinegar to skillet bring to a simmer , cover and cook 8 to 10 minutes until vegetables are fork tender.
  2. Add cabbage, apples and chestnuts and cook for 5 minutes...remove from stove and pour lemon juice on top..
