1Arrange sweet potatoes on baking sheet and bake at 400 for 1 hour or until
tender. Cool slightly and peel sweet potatoes. Place pulp in large bowl. Heat
heavy cream and butter in pan until butter melts. Add butter mixture, maple
syrup, brown sugar, white sugar, orange juice, vanilla, cinnamon and nutmeg to
the sweet potato pulp and whip with mixer until blended and fluffy. Spoon into a
baking dish and top with marshmallows. Broil until marshmallows are brown.
