Ingredients

  • 1 teaspoon olive oil
  • 1 - medium onion, cut in half then sliced
  • 2 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, dry packed, julienned
  • 3/4 cup quinoa, dry
  • 2 1/2 cups vegetable stock (or other stock) you might need more
  • - salt to taste
  • - pepper to taste

How To Make sun dried tomato quinoa

  • Step 1
    Add oil to the pot and add onion. Cook until transparent.
  • Step 2
    Add the garlic and cook just until you smell the garlic.
  • Step 3
    Add everything else and cook 15-20 minutes until the quinoa is light and fluffy and you can see the white part (the germ?) starting to unravel from the inside.
  • Step 4
    Season with salt and pepper to taste and serve.
