Quinoa is a great choice for people with Celiac's or just those wanting to experience something new. You can usually find it in the aisle with other grains.

1 tsp
olive oil
medium onion, cut in half then sliced
2 clove
garlic, minced
1/2 c
sun dried tomatoes, dry packed, julienned
3/4 c
quinoa, dry
2 1/2 c
vegetable stock (or other stock) you might need more
salt to taste
pepper to taste

How to Make Sun dried Tomato Quinoa


  • 1Add oil to the pot and add onion. Cook until transparent.
  • 2Add the garlic and cook just until you smell the garlic.
  • 3Add everything else and cook 15-20 minutes until the quinoa is light and fluffy and you can see the white part (the germ?) starting to unravel from the inside.
  • 4Season with salt and pepper to taste and serve.
