Ingredients
- 1 teaspoon olive oil
- 1 - medium onion, cut in half then sliced
- 2 cloves garlic, minced
- 1/2 cup sun dried tomatoes, dry packed, julienned
- 3/4 cup quinoa, dry
- 2 1/2 cups vegetable stock (or other stock) you might need more
- - salt to taste
- - pepper to taste
How To Make sun dried tomato quinoa

Step 1Add oil to the pot and add onion. Cook until transparent.

Step 2Add the garlic and cook just until you smell the garlic.

Step 3Add everything else and cook 15-20 minutes until the quinoa is light and fluffy and you can see the white part (the germ?) starting to unravel from the inside.

Step 4Season with salt and pepper to taste and serve.
