summer vegetable medley
We love this vegetable combo made with fresh summer veggies from the garden. Caramelizing the onions takes a bit of time, but it's definitely worth it!

Ingredients
- 1 large sweet onion, chopped
- 1/2 teaspoon sugar
- 2 tablespoons olive oil, divided
- 2 ears corn, kernels removed
- 1 medium zucchini, sliced
- 1 medium yellow summer squash, sliced
- 1 large fresh tomato, diced
- 2 cloves garlic, minced
- 1 teaspoon salt, to taste
- 1/2 teaspoon black pepper
- 1 cup grated Monterey Jack or cheddar cheese
How To Make summer vegetable medley

Step 1Over medium-low heat, heat 1 Tablespoon of oil in a skillet. Add chopped onion and 1/2 teaspoon sugar. Saute onions, stirring occasionally, until onions are caramelized to a light brown color. Set aside.

Step 2In a wide skillet with a lid, heat 1 Tablespoon oil until shimmering. Add corn kernels and sear momentarily on medium-high. Then add squashes and spread ingredients out in the pan and let them fry, without stirring, for a minute or so. Then stir (we're aiming for a little bit of charring on the vegetables).

Step 3Add the garlic and saute just until veggies are done to your liking (I like a little bit of crunchiness).

Step 4Add the fresh tomatoes, stir them in, and remove the pan from the heat. Salt and pepper to taste.

Step 5Sprinkle the cheese over the top and cover with the lid until the cheese melts. Serve and enjoy!
