We love this vegetable combo made with fresh summer veggies from the garden. Caramelizing the onions takes a bit of time, but it's definitely worth it!

prep time 15 Min

method Stove Top
yield 3 serving(s)

Ingredients

  • 1 large sweet onion, chopped
  • 1/2 teaspoon sugar
  • 2 tablespoons olive oil, divided
  • 2 ears corn, kernels removed
  • 1 medium zucchini, sliced
  • 1 medium yellow summer squash, sliced
  • 1 large fresh tomato, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper
  • 1 cup grated Monterey Jack or cheddar cheese

How To Make summer vegetable medley

  • Step 1
Over medium-low heat, heat 1 Tablespoon of oil in a skillet. Add chopped onion and 1/2 teaspoon sugar. Saute onions, stirring occasionally, until onions are caramelized to a light brown color. Set aside.
  • Step 2
In a wide skillet with a lid, heat 1 Tablespoon oil until shimmering. Add corn kernels and sear momentarily on medium-high. Then add squashes and spread ingredients out in the pan and let them fry, without stirring, for a minute or so. Then stir (we're aiming for a little bit of charring on the vegetables).
  • Step 3
Add the garlic and saute just until veggies are done to your liking (I like a little bit of crunchiness).
  • Step 4
Add the fresh tomatoes, stir them in, and remove the pan from the heat. Salt and pepper to taste.
  • Step 5
Sprinkle the cheese over the top and cover with the lid until the cheese melts. Serve and enjoy!
