Good, quick recipe to use all those summer squash!

Ingredients

  • 6-8 medium yellow squash
  • 1 large onion (sliced)
  • 1/4 cup sugar (splenda works fine)
  • 1/4 cup oleo
  • 1/4 cup water
  • 1 teaspoon salt
  • 3/4 cup cheddar cheese, grated
  • 1 can french fried onions

How To Make summer squash casserole

  • Step 1
    Cook squash and onion with sugar, oleo, water and salt until squash is tender (drain if all water is not cooked out).
  • Step 2
    Alternate with cheese in casserole. Bake at 350 degrees for 20 minutes.
  • Step 3
    Just before serving, add the French fried onion to top. Place back in oven for about 15 minutes. Serve while hot.
