Ingredients
- 6-8 medium yellow squash
- 1 large onion (sliced)
- 1/4 cup sugar (splenda works fine)
- 1/4 cup oleo
- 1/4 cup water
- 1 teaspoon salt
- 3/4 cup cheddar cheese, grated
- 1 can french fried onions
How To Make summer squash casserole

Step 1Cook squash and onion with sugar, oleo, water and salt until squash is tender (drain if all water is not cooked out).

Step 2Alternate with cheese in casserole. Bake at 350 degrees for 20 minutes.

Step 3Just before serving, add the French fried onion to top. Place back in oven for about 15 minutes. Serve while hot.
