  • 6-8 medium
    yellow squash
  • 1 large
    onion (sliced)
  • 1/4 c
    sugar (splenda works fine)
  • 1/4 c
  • 1/4 c
  • 1 tsp
  • 3/4 c
    cheddar cheese, grated
  • 1 can(s)
    french fried onions

How to Make Summer Squash Casserole


  1. Cook squash and onion with sugar, oleo, water and salt until squash is tender (drain if all water is not cooked out).
  2. Alternate with cheese in casserole. Bake at 350 degrees for 20 minutes.
  3. Just before serving, add the French fried onion to top. Place back in oven for about 15 minutes. Serve while hot.
